Today's post is "Karamani Kuzhakattai". These kuzhakattais are usually made for Karadaiyan Nombu. This is my most favourite snack and my aunt is a super specialist in making this yummy delicacy. I learnt this recipe from her. It is very simple to make and this is healthy because it is made with rice flour, and addition of Karamani (Black eyes peas) gives the protein boost , and the fact that these kuzhakattais are steamed is an added bonus to make it a perfect healthy snack 💪.
Ingredients:
Rice Flour 1 cup
Black Eyed Peas 1 cup
Coconut Pieces 1/2 cup
Curry leaves
Hing pinch
Salt to taste
To temper:
Mustard Seeds 1 tsp
Urad dal 1/2 tsp
Green Chilli 1 or 2
Method:
Dry roast the black eyed peas and soak it in water for 30 minutes. Roasting adds lots of flavour to the Kuzhakattai. But do not brown it. Next, cook them until soft. Drain the water and keep it aside.
Heat oil in a pan. To it add mustard seeds, urad dal, green chilli. When they splutter add hing and 2 cups of water. [The ratio is for 1 cup of rice flour, add 2 cups of water].
Add salt and black eyed peas to it. When the water starts boiling, add the rice flour slowly. Keep stirring / sauting until a soft lump is formed. Switch off the flame and allow it to cool.
Next, make small equal sized balls from the above (step 3), flatten them and put a hole in the middle. The hole ensures that the Kuzhakattai is cooked evenly and properly.
Arrange them in idli plates. Steam for 10 minutes. Serve it hot with butter / pickle / any chutney. (I just gobbled it without any side accompaniment 😂😂).

Note:
Some add grated coconut but my aunt suggested me to add Coconut as pieces, as it gives the super crunch to these kuzhakattais.
