Raita !! This is the quintessential part of food in Indian households. Today's post is Kumaoni Raita which is a specialty from Uttarakhand (a state in Northern India).
The basic ingredient used is Cucumber. Here the mild, lightly sweet flavour of the Cucumber combined with the pungency of mustard seeds, the warm, earthly slightly peppery flavour of the roasted Cumin Seeds and the spiciness of the green chillies makes this a very flavorsome dish.

Ingredients:
Cucumber 1 medium size
Curd – 1 cup
Green Chili – 2
Mustard seeds 2 or 3 tsp
Roasted Cumin Seeds 1 tsp
Salt to taste
Coriander leaves few
Method:
Peel the skin of the cucumber, grate them. Squeeze them a little to remove the excess water and keep it aside.
In a mixer jar, add mustard seeds, green chillies, roasted cumin seeds & grind into a smooth paste adding little water.
Next in a bowl, take the curd. Whip it to get more creamier raita. To this whipped curd, add the grated cucumber, blended paste (step 2) and salt.
Garnish with fresh coriander leaves.
Refrigerate for an hour and serve.
Note:
You can also add crushed garlic cloves, if you like the garlicky flavour.
