Lima Beans (Mochai) Salad with a fruity twist

Lima beans is also known as butter beans and in Tamil we call it as "Mochai". It is an important source of plant proteins. Do you know that Lima beans is

However please note that it needs to be taken in moderation. Since they are high in fiber, you should increase the consumption of this beans slowly, otherwise it will result in bloating.


There are many recipes that can be made with this simple protein legume. Today's post is a salad with a little fruity twist.


Ingredients


Mochai 1 cup

Onion 1

Tomato 1

Pomegranate few

Chopped Mango pieces few

Juice from one lemon

Salt to taste

Pepper powder 1 tsp

Coriander leaves few


Method:


🌿 Soak mochai (Lima beans) overnight. The next day, drain the water and pressure cook them for 4 whistles.

🌿 Once done, add it to a bowl.

🌿 Add chopped onion, tomato to it and mix well.

🌿 Add salt, pepper powder to it.

🌿 Garnish with chopped mango pieces, pomegranate and coriander leaves.

🌿 Add lemon juice, mix and serve.
