Mixed Veg Fry

Today's post is a simple Mixed Vegetable Fry. The vegetables are sauted in a blend of aromatic Indian Spices and tastes so delish that even a fussy eater wouldn't resist eating it 😅.


Let's get on to the recipe.


Ingredients:


Onion 1

Capsicum 1/2

Green Peas 1 cup

Carrot 1 small

French Beans 4

Cauliflower 1 cup

Baby Corn 3 to 4

Potato 1

Green Chilli 1

Garlic 1 or 2 pods

Ginger 1 inch

Turmeric Powder 1/2 tsp

Coriander Powder 1/2 tsp

Red Chilli Powder 1/2 tsp

Pepper Powder 1/2 tsp

Garam Masala Powder 1 tsp

Mustard Seeds 1 tsp

Cumin Seeds 1/2 tsp

Sesame Oil

Spring Onions few

Salt to taste


Method:


  1. Heat oil in a pan. Add mustard seeds, cumin seeds. Allow them to splutter.

  2. Add green chilli, garlic and ginger. Saute for a minute.

  3. Add onion, capsicum. Saute until the onions turn translucent.

  4. Next add carrot, peas, beans, cauliflower florets, baby corn and boiled potato. Give it a quick stir.

  5. Next add salt, turmeric powder, coriander powder, red chilli powder, pepper powder and garam masala powder.

  6. Cover the pan with a lid and allow the vegetables to cook.

  7. Once cooked, add spring onions on top.

  8. Enjoy hot !
