Mixed Veggie Stir Fry

Today's post is a simple stir fry made out of veggies. This can be had as an accompaniment to rice or can be had as a stuffing for bread or chapathi too.


Let's get on to the post.


Ingredients:

Potato 2 medium sized

Cauliflower Florets 1 cup

Red and green Capsicum 1 cup

Onion 1

Ginger 1 inch

Green Chilli 1

Chilli Powder 1/2 tsp

Coriander Powder 1 tsp

Mustard Seeds 1 tsp

Cumin Seeds 1/2 tsp

Salt to taste


Method:

1. Boil potatoes until soft. Peel the skin and chop them into bite size pieces.

2. Immerse the cauliflower florets in hot water with a pinch of turmeric.

3. Heat oil in a pan. Once hot, add mustard seeds and cumin seeds and allow it to splutter.

4. Add ginger and green chilli. Saute it for a minute.

5. Add the chopped onions and fry until translucent.

6. Next add the red and green capsicum. Saute them for couple of minutes.

7. Next add the boiled cauliflower florets along with the potatoes. Add salt, chilli powder, coriander powder.

8. Cover the pan with the lid and allow it to simmer for couple of minutes.

9. Switch off the flame.
