Moong dal Salad (Carrot Kosambari)

This is a simple salad with the goodness of carrot and moong dal combined in one. This is a typical South Indian salad and is usually served in most of the marriages. It is very easy to make and healthy too. Lets see how to make it.
Ingredients:
Grated Carrot
Moong Dal
Green Chilli
Grated ginger
Salt to taste
Mustard Seeds
Oil for tempering
Few curry leaves and coriander leaves
Method:
1. Soak the moong dal in water for 30 minutes.
2. After 30 minutes, drain the moong dal water. Add the grated carrot and the soaked moong dal in a bowl.
3. Add salt to it and mix it well.
4. Heat oil in a pan. When oil is hot, add mustard seeds and allow it to splutter.
5. Next add the grated ginger, green chilli and saute them for a minute.
6. Add it to the grated carrot and mix them well.
7. Garnish it with curry leaves and coriander leaves.
You can also squeeze lime juice if you wish to. The healthy salad is ready.
