Potato Cauliflower Fry:

Today's post is a simple cauliflower and potato fry sauted with Indian spices. Cauliflower and Potatoes are one magical combo that blends very well, isn't it? So simple to make. Can be rolled inside a Chapathi or can be served with rice as a accompaniment to sambar / dal.
Ingredients:
Cauliflower 1 medium size
Potato 4 medium sized
Onion 2
Ginger 1 inch
Garlic 1 pod
Curry leaves few
Coriander leaves few
Method:
1. Cook potatoes until soft.
2. Immerse the cauliflower florets in hot water with a pinch of turmeric and salt.
3. Heat oil in a pan. Once hot, add mustard seeds and cumin seeds and allow it to splutter.
4. Next add the curry leaves and coriander leaves. Saute them for few seconds.
5. Add ginger and garlic. Saute until the raw smell goes away.
6. Add onions. Saute until translucent.
7. Add the boiled potatoes and blanched cauliflower florets.
8. Add salt, turmeric powder, chilli powder. Cover the pan with a lid. Let it cook in medium flame for 5 minutes.
9. Switch off the flame and garnish with coriander / curry leaves.
