Roasted Bell Pepper Pasta

Pasta is 💚,do you agree? Today's post is on "Roasted Bell Pepper Pasta". I really loved the combination of roasted red bell pepper and Fusili pasta. It was magic 😅. This pasta was spicy and creamy. Loved every bite of it. If you have never tried making this, I would say this is a must - try. And you wouldn't regret it 😎.
You can make this in an oven or a stove top. I chose the latter. So here is how I made it.
Ingredients:
Pasta of your choice (I used Fusili pasta)
Red Bell Pepper 1
Onion 1 or 2
Garlic pods 3 to 4
Cashewnuts few (depending on how creamy you want your pasta to be)
Cornflour 1 tsp
Milk 1/2 cup
Cumin Powder 1 tsp
Pepper Powder 1 tsp
Red Chilli powder 1 tsp
Parsley few
Red Chilli Flakes 1/2 tsp
Coriander leaves few
Salt to taste
Butter
Method:
1. Cook the pasta:
* In a large vessel, add water and bring it to a boil.
* Add salt and a tsp of oil to it.
* Add the pasta to the water and cook it until it is just cooked (al dente). Do not overcook the pasta.
* Once the pasta is cooked, drain the hot water. And fill it with cold water to stop the pasta from cooking further. Drain the cold water.
2.Prepare the Roasted Bell Pepper sauce:
* Soak some cashewnuts in warm water.
* Saute onions, garlic and red bell pepper in a pan.You can roast them in oven too.
* Add the sauted veggies (from above step) along with cumin powder, pepper powder, chilli powder, soaked cashewnuts, milk, cornflour to a blender. Blend them until a creamy consistency is formed.
* Heat butter in a pan. Add the ground paste, salt and let it boil for a minute.
3. Prepare the Pasta:
* Add the boiled pasta to the above sauce. Mix it thoroughly until all the pasta is coated with the puree.
* Simmer for 5 minutes until the pasta blends with the puree and thickens.
* Switch off the flame.
* Garnish with parsley, chilli flakes & coriander leaves. Enjoy hot.
